This coffee comes from a small farm in the highlands of Colombia. The high altitude and cool growing conditions produce a dense bean reminscent of Ethiopians. Instead of strong berry notes, though, the sweetness of the bean shines through here. With notes of roasted marshmallow and black cherry. There are less prominant notes of Earl Grey tea and hibiscus.
I found a roast profile that highlights the complexity of the bean, making it great for espresso and pour over.
